Sounds like you are off to a good start. Let us know how it turns out. I quite fancy the UJSMs that I've been making but it does take a few times to get your process down. Once you have a system, you're all set.

Thank you buddy. I will keep you all posted.
I tried some of the wash lastnight and wasn't too sure about the flavour
But am still hopeful of a good end product.
Been thinking about trying flaked maize again now I know where I went wrong before.
It should be fine for a ujsm shouldn't it?

Only getting bubbles through the airlock about 3 minutes apart now!
Suppose I'd better hurry up and run my sugar wash so I'm ready to rack.
Getting excited now (how sad is that?!)

Just racked the wash but had to bring my girls sailing.
Hoping to run the wash tomorrow once finings have been in and it's been degassed.
After a little help.
I tried a drop of the racked wash and it tasted almost sour, not like vinegar and was just wondering if this is normal please?

Grains encourage a lactic acid infection/colony. Over time it will convert some of the alcohol to acid. That is the sour in sour mash.

So should I use finings or leave it to clear on its own?
The grain is sat in the first fermenter with about 2inch of wash covering them. Is this ok and if so how long for?
Hoping to run it tomorrow to get my first backset.

Myself, I'd use the finings or run it as is.

I decided to add finings last night and this morning it's looking ready.
Going to start stripping this afternoon using advice from rhinus.
If anyone else has any tips with running it through the smartstill then I'd love to hear
About your procedure.

Well I've started stripping it and all I can say oh my god!!!!
The smell of the strip is bloody incredible!, smells a little like buttered corn cobs.
I am trying so hard to resist the urge to taste the strip.

Hmm! Appears I may need to up the abv a little.
I've just got a little over 750ml strip from a 9% wash.
That was by running like usual:- stripping until what's coming of the still
Is 20%

Hey Corps! I love the smell of corn after the strip runs! It sounds like you have got it going? Did you add a gallon or so of backset to the first fermenter and get it going on generation 2? The wash seems a little low but you can adjust for it next time. Also, make sure you collect some feints to add to your low wines also for a little boost.

Heya buddy. I managed to get gen2 going last night. It's bubbling like crazy as we speak.
I've adjusted the abv to 12%
Loving the hobby even more now!

Just had a cheeky sip of my first run of ujsm after following guidance from rhinus and then letting it air 24hrs.
I am well impressed already that something this nice could come from chicken feed and sugar.
None of the usual sugar wash twang.
Can't wait to try gen 2
Upped the abv to 11.5 this time as I only managed to get 1500ml of drinking spirit at 45% from my original 9% wash.
I just didn't want to stress my allinsons yeast too much.
