@Mashy: 25-28C is right on. It is so hot here that I have difficulty keeping it below 30C and have to add frozen bottles of water.

@Mashy: What was your starting SG prior to pitching yeast? How many liters is your wash?

Now on oak. 5l 50% 80g medium toast American.
Keeping my hands on my pockets might be a problem with this. It tasted good fresh out.

Hi Mashy
Did you add anything other than water to your wash, like sugar, citric acid or nutriants etc.
Or did you just ferment with pure syrup and some water, also what yeast did you use?

When I initially followed RJ's recipie for Cachaca,it was just Golden syrup,water,and bread yeast,for me Allinson's.
It was pretty good after a wee time spent on oak,it was ok before.
When time allows,I will do it again.
Life is just a bit busy right now.

Just fermented with pure syrup and water, also vitamin b. I used fermipan bakers yeast.
Steady 28c fermentation.
Impressed. I notice this morning we already have some colour from the oak.
Will monitor oak daily for flavour ... that's my excuse.

What would you say are the differences between this golden syrup cachaca and white rum made from molasses ?

Smoother and more pleasant. I made some from molasses a while ago and gave it away. . . I couldn't drink it myself.

Agreeing with smoother; also,less "in your face" than any rum tried so far,and I like most rums out there.

Well i havn't been around for a while, i thought i owed you guys an update on my cachaca.
I ended up doing three 24 ltr ferments, stripped as RumJohn suggested fast for flavour,combined and diluted to 30% done my spirit run maybe not as fast as suggested,just a nice broken flow.the late heads and the early tails were still really smooth,so i included them into the ageing jar. it sat at 68% for 3 months then diluted to 40%, ended up with 8 ltrs of 40% product.
Initially i was going to do two wash's, decided to do three just to get a full boiler charge. As said i stripped fast for flavour, spirit run was done a little differently. i stuffed two ss scrubs in the bottom of the pothead and ran it slower, about 1kw. I was quite impressed how smooth it tasted after cuts, even at 68%.
The verdict......i can't honestly say it tastes rumlike, its too smooth, to tell the truth i can't compare it to anything ive tasted before. Its very nice,clean mouthfeel with a very feint hint of the G/S flavour as an aftertaste. Hindsight dictates i should have added that undecided jar of heads,it might have given it a bit of rasp on the tongue that i like, or should say ''accustomed'' to.
After the taste test the 2ltr cider jug vanished,so i know someone that likes it.
Another 2ltr jug was assigned to a very tasty kahlua.The remaining two jugs may
go the same route as i dont fancy drinking something as smooth as this,it goes
down way too easy.I dont do mixers except tonic for gin/vodka, tonic doesnt do this
justice.
