Thanks for that Bill. I have thought I had never done schnapps before, but have inadvertently made lots of very small batches.

I didn't realise schnapps was done by just infusion, I do this when trying out a new botanical for gin. I infuse for a few days and see what this makes taste and smell wise. If its something I like and think I'll use, I keep a very small bottle of it in my aroma kit.

When trying the gin, I find a sniff of the infusion helps you pick out the taste much more easily, I'll then mark the recipe with a plus or minus or a tick against each ingredient so I'll adjust the recipe next time I run it, and hopefully improve it.

I'd be quite interested to do some single infusions and try a bit of schnapps blending. Cool!

I particularly like the sound of the St.Johns Wort Schnapps.

As well as everything else St.Johns Wort is used by herbalists as an Anti-Depressant. This could be a drink that makes you happy in more ways than one.

I've got a few litres of raspberry schnapps on the go at the moment, very tart, its going to need some sugar I think.

Nice colour though ;D

Just done the Elderberry schnapps it's very nice a little bit portish if thats a word,this was very bitter untill i added 5 tsp sugar wich made all the differance.

Iv got 3 on the go strawberry,blueberry,and butterscotch.the BS-is made by dissolving 2lb of sweets in bourbon whisky for a couple a days, its very similar to a baileys type drink it splits into when its ready so i add evaporated milk to stabilize it just befor bottling, i very nearly lost it last night as the gallon jar i made it in spilt round the base alan

Well the raspberry schnapps is a success. Bottled up just under 2-1/2 lts, the colour is fantastic deep red, and I adjusted the very tart flavour with some sugar syrup.
The sugar rounds the flavour off without it being overly sweet like a liqueur.

For the little half litre I mixed it with a little of apple pie (apple infused DWWG) its not as good as the straight raspberry as its lost that tartness that makes it interesting.

Ive just made the cinnamon schnapps 3x3" tubes for three week in 75cl @40 abv,This stuff is hot cinnamon when neat but if you add coke you get a vanilla and coconut flavour coming through i'll make this again
ps just trying an odd one of these and the coconut flavour is still there even when neat
