Urgent help re 1st wash

Postby Ebnat » Fri Aug 22, 2014 11:34 am

;D Hi guys hope I can get e reply before 5pm. If not no probs will go with my instincts.

I made the was as per instructions useing the tubo stuff that comes with the AS kit. Started it last Thurs. @ 1.090. yesterday and today it is @0.990, sufficient IMHO to de-gass and fine. However the instructions do say 0.990-0.980.

My problem is that we go away Sunday 'till friday and would like to have the cleared wine bulk saved before I go.

Am I taking a risk or should I just leave it alone 'till we come back (an extra 7 days on the lees).

If it was a "normal" wine I would rack-sorbet etc, but as this my first I don't want to spoil it.

This one is Simples ;)

De-gas the wash and rack to a clean container with an airlock and add Turbo Klar or other fining agent. You can happily leave the wash until you come back and the little remaining fermentation that will take place will produce CO2 to protect the wash from oxidation.

When you return your wash will be definitely be finished but may need further fining.

Hope you're going somewhere relaxing and enjoy ;D

;D Thanks Aidanmac, but I may have overeacted. Been stiring wash to de-gas and after an hour I noticed that it had started to drop the carbon out without finings so I am going to continue to de-gas 'till about 4pm then give it a final good stir and add the finings without racking first.

I am following the instructions about this.

By 4pm Saturday I am hoping it will be cleared and I will rack into DJs (I have loads of these and space) and store under airlocks 'till I come back.

Hope you agree with this as I am going with my instinct ( and over 50 years of HB) It is what I would do with a bulk wine, but of course I would have sorbet etc first.

Regards Ebnat ;D
