I think the world would be better off without
Xmas. One thing always happens, trapped wind,
bloated and uncomfortable.
The end result is a massive trump and I am on

Today I made the Piccalilli for the Xmas period.
Full of semi-crunchy home grown veg. in a spicy sauce.
The perfect antidote to too much meat and stodge.
Just sayin'.

I make it up as I go along, and it depends upon what I have lots of.
Googling shows lots of recipes.
I suggest reading half a dozen, and then get going, reading between the lines.
It really is a recipe with more variations than possibly any other.
You could play with this the rest of your life.
Some bullet points:
I don't give the veg. a 24 hour salt bath.
Cauliflower is a Must, and for me onion and something Green, the rest of the veg, is down to what you have.
Cut it up small, 1cm cubed.
I use clear non brewed condiment, no vinegar.
Use your head and teeth when cooking the veg.
Obviously Turmeric, Ginger and Mustard with your Corn or Plain flour thickener.
I don't add any salt and very little sugar.
Make sure your jars are sterile, and seal properly after cooling.
DO leave 6 weeks or so before enjoying.
Enjoy

With all things in life, when you find the "Sweet Spot", you wonder how it eluded you for so long.
And "Taste" is so personal, that to me, recipes are only guidelines, not scripture.

Hi this is what I'm trying mulled spice gin
For an airstill 2litres of 40% neutral and 1 litre of water
12g juniper berries.
6g corriander seeds.
Pinch of allspice.
4g of dried orange peel.
Pinch of ground cinnamon.
Pinch of nutmeg.
2 cloves
Gonna run it till i get 800 ml.

Have just set 6ltrs sloe gin.
1ltr Plymouth Gin
1lb Frozen Sloe Berries
1 Star Anise
