Forgive the newb questions but!!... have been looking into building as opposed to buying an upgrade to my airstill....unfortunately kegs in the UK arent cheap.........so here goes. I understand the turbo 500 still cannot be used as a pot still (with packing removed)! Can this be overcome by making an alternate head to use in 'pot' mode? alternatively can the essencia express still (glorified pot still) head be replaced with a boka style condenser for improved reflux operation?

IMO whilst it is "possible" to run most packed columns in pot still mode it is actually a better option to use a dedicated alternative pot still.
It does mean you need a connector between the boiler and the base of the column but this is usually fairly easy to do.

Check out the T500 section.
I think edwatters made a pottie head for it.

I to am looking at options for a bigger still as the airstill just takes so long but don't have the room for a proper pot still setup at the minute, i was looking at the t500 although is a tad expensive, however I believe the t500 is a reflux still, which strips almost all flavour ? But is good if you want a neutral, but while I do need a good neutral I also want to keep he flavours of the grain if I'm using grain as opposed to sugar wash, any ideas or is the t500 the best option to give a good neutral, then try and modify into a pot still and this will keep the flavours ?

Do not appologise for asking questions.
Kegs may not be cheap but they are part of the solution which overall will be a lot less expensive than the other two options that you quote.
If you choose to use copper then the type of head or heads that you will make is the easy bit and can be assembled on your kitchen table, working with stainless steel is a little more difficult and makes the boiler more troublesome.
Solve the boiler first and the rest will fall into place.

Also wish to avoid the 'troublesome bit', no problem with the easy bit, hence a mod or separate head would best suit my requirements....(thats in no way an admission of lethargy, but if theres an easier way..)
