Pineapple Liqueur

As we have had a lot of chat surrounding fruit based liqueurs I thought I would post one I have made a few times and SWMBO loves!

Take the skin off a whole pineapple and discard.

Cut the flesh into thumb size pieces, pop in a kilner jar with enough 40% ABV alcohol to cover the fruit by one inch.

Leave for two weeks, shaking the jar periodically.

When done, strain the liquid.

Put the liquid through some muslin or filter paper (you will need a few filter papers to separate the mush).

Once done measure the alcohol, and add sugar water (50% sugar x 50% water boiled until dissolved in a pan) to it. My preference is 70% of alcohol volume. So 1 litre of alcohol gets you 1700ml after the sugar water.

Then, bottle, chill, and drink.

It's a winner at home.

i think ill give this one a whirl.

ive only tried the SS one from the HBS which was a winner.
