@AT: mate, apologies if this is in your post thus far but Im from Australia
- have you considered running your strips down to feckall% to get everthing you can from the wash?
- have you noticed the peatiness (smell/esp.tongue taste) disappears with the 'accelerated angels share' you meantioned?

That works.

Is the BM Mash programme something like .....

1. 60° C › Start
2. 52° C › 0 min
3. 66° C › 70 min
4. 73° C › 5 min
5. 78° C › 5 min
6. Boiling › 60 min

I might be a girl and just for 22l to start with :D

I do that anyway on the strip run its essential for the flavour
On the spirit run after the fore shots cut I run hearts down to around 61% then collect tails down to F..... All too and this plus heads goes into next spirit run just as the big boys do this builds up the flavour profile
And no don't seem to lose peaty flavour in maturation, these elements are in the lower end of the mix so perhaps less volatile plus the wood influence mellows the initial harshness as you would expect

Kylie
I program my BM for a stepped mash can't remember exact temps but 10 mins at lower 90mins around 63 degree and 30 mins a bit warmer. No boil is needed though just switch off drain and sparge

Just trying to get my head around the figures...and failing.
If this is a 20l BM I was thinking 6kg malt per run expecting 5%-6%
but 10% ??

7 to 8 kg with about 17 litres plus a sparge of 5 litres gave a wash of about 21 litres OG 1080 ish so yes about 10 + % at about 1005 FG

That makes sense. How are you doing your sparge?

I have 5 litres or so in a big pan on the gassing heated to 80 plus

Once mash holder is lifted out of the wash half goes in with mesh lid on then once it's drained through mesh off with the top mesh,a good poke around with a long handled wooden spoon then the rest of the sparge water ditto and leave a good while

Nice. I had considered draining the BM into fermenter. Then refilling with 5L @ 80c water and running the pump on manual for a few mins ......

Those are some good numbers AT.
My more primitive mashing methods, give far lower ABV mashes, but decent product.

I am looking forward to the move of domicile, and getting time to do another, more involved wash than the usual lentil, which keeps me ticking over at the moment.

@AT: cheers for response to my q's (above)....
ok, given the UK pricepoint, I do get why you'd dive in re kg per wash on the grain....however: hows the sparging work for you?
I mean, if you fanatically squeezed/squashed the grain at end of mash, is it likely you'd get more bang-for-buck? from where you are now?
???

I would like the time to home build something to squeeze the last bit of juice from a grain wash.
I'm sure it would help in strip ABV.

You might get a bit more fermentable wash but the bulk washes out with the sparge
Plus it's a messy job trying to fight with hot grain !!

On another note I've just paper filtered (just to remove wood fragments etc) some 16 month old which had a bit Madeira in ready to bottle today
It's very nice but this is the longest I've left a barrel and the ABV drop is quite hefty in these little barrels from around 9 litres at 47% to 7.5 L at 41%
Probably 9 months is about right but next experiment will be using dominos then a shorter period in the barrel

They seem to be very greedy angels in your part of the world AT.
Maybe a reason for casking at higher ABV's,nearer the 60 odd percent the Big Boys use?
And maybe a result of your smaller barrels.
As always,what do I know?

Sometimes I just suck info in,let it amalgamate with other such, and regurgitate.
Sometimes I even use it!

Glad your product is tasting good.
That is the important thing.
