wineos adapted wash

Hi all ive been playing with wineos wash for a good few months now and had some great neutral but also had a few problems with it stalling so hear is my adapted version for a 26lt wash
6kg sugar
0.5kg molasses (only to achieve a nice smelling indoor ferment)
7lt boiling water to desolve sugar
1 cup strong tea
1 tsp citric acid in with the boiling water sugars & tea stir then wait 15min
then top up to 26lt with cold water
fill a jug wth your sugar/water mix to this add
1tsp gypsum
1tsp calsium carbonate
0.25 tsp epsom salts
3 tsp dap (diamonium phosphate)
2tsp brewers yeast (for vit b)
2tsp youngs yeast nutrient
stir and add to your fermenter
with a start temp of about 30 deg c and start sg of 1.098 and ph6.5
add 0.5 of a cup of daddy (distillers active dried yeast)
stir in and let it breath for 30 min then stir again lid and airlock. keep temp about 26 deg c
My results
Start sg 1.098 ph 6.5 stirred daily
day1 sg 1.035 ph 3.0
day2 sg 0.995 ph 3.0
day3 sg 0.990 ph 3.0
day4 sg 0.988 ph 3.0 and done added 4 tsp stabiliser potasium sorbate degassed an added finings
day5 24 lt of 14,9% abv wash ready to distill and when done still tastes clean with a decent yield

That seems as impressive as any "turbo" yeast.

Is the ferment as vigorous as it sounds or can you use bubbler type airlocks?

Well it's an interesting recipe.

The issue seems to be more about whether turbo yeasts are actually anything special or whether because they come as a pack with the nutrients etc already included in the mix, that they're doing anything faster or not.

It only take a little proper quality control to mix distillers yeast that will hit 14% or so, with the correct amount of nutrients etc and then repackage it as "turbo", which its just about the correct measurements to hit the right levels with table sugar etc.......

I've often thought about whether it's gonna be any worse if I just mixed the sugar up with the water to the usual levels i.e. 6kg sugar in 21litres water, then just use a reasonable wine yeast and nutrients to achieve a similar strength of "clean" sugar wash......

does get me thinking though. I might have a dig around to see what I can find out and give it a try.......

Just done another of these washes this time used 5.5 kg sugar and 0.5kg molasses and rehydrated the yeast before pitching start sg =1.090 72hrs later 0.986 and done fastest ferment ive ever achieved

Did you use any temperature management bill ? Or was it just room temp......

Oh, right. Well that means a bit more thought on yeast for me to attempt a batch of sugar wash with just wine yeast and nutrient then. As some of the wine yeasts produce quite high fusel levels at that temp. They seem to like about 18C, though there's good strains with a nice wide temperature range, so all is not lost yet......

Hi again as you suggested in your earlier posts ec118 is a good choise i have had success at 22 deg c with this yeast using 5.5kg sugar and start sg of 1.085 but ferment took 11 days to get to sg0.990 = about 13% abv and still a nice clean brew

Just done another of these washes only differance to original post was 5 kg sugar (4.5 cane 0.5 molassas) start sg1.080 and from start to finish @ 0.988 11%ish abv took 72 hours and is very neutral and hardly produces any heads it produced 6.2 litre diluted to 40 abv
