Bourbon...ish.

This is the first 1/2 gallon of my "bourbon", grain bill is 70% flaked maize, 16% malted wheat and 14% malted barley. I distilled in the Bok, using Smiley's method, first run without feints, second two with feints. It is very smooth, but also full flavoured. I know that his methods split opinions, but all I can say is that from my experience, it works. In the near future, I'll have my pot still attachment made up, and will give that a try.

This is just over a week on charred American white oak.

Well done that man.... ;) it looks the mutt's nuts... :D would like a sip or two of that.
We're in the middle of bottling wine today...and it tastes smegging great.. ;D

Thank's for the update. I have Ian's book and he is my vendor of distilling things here in Canada. :-) I always thought his methods sounded interesting and I will take a good drink over a strictly traditional method. Please keep us updated.
