Banana moonshine wash.

While waiting for my banana wine to simmer I happened across this guy who makes a banana wash....boy o boy that's got to be one for me to try.

Not sure I agree with some of his ideas. But well worth a try.
I am getting the idea this would be a smoooooth white rum.

I don't know mash...I was thinking more in the line of a liqueur???. I'll take another look and will try a small wash.

Liqueur.. yes indeed if you sweeten it a bit. Banana is known to add body and smoothness to wine, so some of this should pass through into the spirit. Banana jam is stunning.
Interesting that this recipe uses distillers yeast, but he ferments like a wine? I would certainly want to be consistent. Either loads of yeast, fast ferment maximising Alc (wash method) OR low and slow to maximize flavour (wine method).
If you want the fruit flavor Lallemand k1v-1116 (which is quick anyhow) 20c. Still when done - loads of flavour. Mead yeasts would also be good.
PS That is not the way to rehydrate yeast! It a good way of wasting viable cells though!

You & I know that Mash.....but this is the "Experts" that I've posted about before. In a situation like this, you take the main info and then add your experience to it.

And the banana chunks stay in the muslin bag until its finished? would it not be better to mash them down? extract all the goodness and then leave it to steep?

Sometimes these things are a compromise.
You are right, BUT they could be a proper Ba$^&D to filter/sieve/fine later. I use dominoes in wine, but I put them in netting sacks and agitate daily in just the same way. When oaking is done I pull the string and up they some - job done - oaking is finished. Same applies here.

The same guy has also done a couple of videos on making an Uncle Jessy's Simple Sour Mash (UJSSM) he doesn't seem like the sharpest tool in the box but his UJSSM videos, especially part two finally made something click in my head.
I'm now going to have a go once I've got an empty FV, it's got to be easier than the mess I got into trying to mash corn for a Bourbon wash, that turned out to be a bit disappointing to say the least.
Plus I've still got quite a large sack of cracked corn that needs using up!!

I think sometimes we are quick to jump to conclusions on folk, He likes everything tidy, his style may be a bit off putting but overall he is just trying to make lawnmower fuel like the rest of us... it takes all sorts to make this planet go round and I like his views on safety first. One thing though, in his spirit run video he is putting 83% ABV through carbon, everything I have read is that carbon will only work correctly on 50% ABV or less.

Yeah, carbon filtering the distillate has probably come from the folk at still spirits who supplied the alembic dome and condenser, just like the tea bags they supply for the Airstill.

We all assemble our own filters for the stuff that we find.
Experience helps a little.
But that takes time.
And experience.

I've used a banana wash/wine a few times, this year I made various fruit infused vodkas from the distillate (raspberry,strawberry,blackcurrant and blackberry) all have turned out great.
