ok guys with Summer here about to start, what are the things to look out for IE with fermentation going wrong. What are the signs to look out for >? I mean being in mind that ALL cleanliness rules have been followed. Seems common sense to know what to look out for instead of blindly going forward with crossed fingers. Please guys Enlighten me
Many Thanks

Not much of a concern generally. Our washes start fast and hit a high ABV quickly so we don't have the infection challenges that brewing beer does. And we don't drink the wash so, unless the infection affects the distillate, infections are of little consequence. Think of sour mash whiskey. I've had a few that seemed to digest the alcohol which was a disappointment. ;D And a couple that did affect the final result in an unpleasant way. Also a disappointment.

Keeping the hordes of suicidal fruit flies out is a good idea.

+1 to thats.

Just watch out for the fruit flies that will cause acetobacter (vinegar) - given pleanty of time and sloppy management.
