Shuggle some pork this way, some venison over here.

You are right though... Mine is a wee bit too big. A leftover from a previous project. But it really is a luxury.

What concerns me more are the times on my above posts.
They appear to be inverted.
The second one almost an hour before the first.
Have I invented time travel?

Back on this one...
I am convinced that super-starter is what is happening. I hope this will prove it.

Test #3
This is the recipe....

Tomato Paste Wash.
19+6ltr recipe:
150g split lentils (red or green)
50g Tomato Paste
50g bread Yeast (3 tablespoons)
5kg sugar total

First step.
Put Tom & Len in a jug & pour on 1 litre of boiling water and stir.
Dissolve 2kg in fermenter. NO INVERSION
Top up to 19ltr at 30c.
Sprinkle Yeast and WAIT for 20 mins.
Now add the Tom & Len mixture.
Whisk air in with a balloon whisk.
Lid on (cracked)
Fermentation temp 30c. Inkbird on heat mat.

Step two.
Once it is well under way (24hours ish)
Add the remaining 3kg of sugar dissolved in 6 litres @ 30c.
Continue fermentation @ 30c.

24hrs after start.

Brew is smelling sweet, with a nice orange foamy cap. Busily fizzing away.

3kg Sugar added.

Finished yesterday. (7th) so took longer than expected. 13 days.
So took a bit longer than expected. Makes me wonder if I got the sugar wrong?

Think we are on for rerunning a invert sugar next.
