Dear Forum members
I am new and enjoyed reading through some of the topics. I am especially eager to try out my first gin recipe and I discovered an orange flavoured recipe on this forum which is great. I want try it soon.

I have an equipment question:

1) A few years back I acquired a 25L water jacket copper still. I have used it successfully for grappa and peaches but I want to try make the orange gin but do not want to fill it up with 25L. Can I say use only 5L? Will such a small quantity affect the evaporation mechanics?

2) I also came across a comment about a sieve on one of the forums. My unit came with a sieve (in 2 half pieces) which I have never used? What is the importance of the sieve?

3) In order to try this orange gin recipe, I need to buy the basket into which to put the herbs and orange skins, where can I buy this "basket"?

Your sieve, if it joins together, should function as a basket, without seeing it, I cannot be sure.
Your still should work fine with less liquid, but do pay it attention, if not power cotrolled, the heating element will rapidly heat and evaporate 5 litres.

You sound like you know how to run this still. So I might end up telling you how to suck eggs.

The water jacket will need to be filled up as normal but you should be able to put smaller amounts in the inner pot.
I would bring it up to temperature more gently and then regulate the heat and run a slower distillation for gin.

At a guess, does the basket sit in the middle?
If so this is for holding all the botanicals for the gin.

There are a few good guides on here about gin making in the library..

Hi Mash and Robert
You guys are spot. I can see that the sieve would fit on the inside of still head but I suspect that the years of making grappa has made the head expand ever so slightly, as the sieve just about falls through so slightly. Any clever suggestions? do you think a fold some copper wire around the edge of the sieve to give it some support.

I wonder if several wraps of plumbers tape around the circumference would hold it in, and perhaps seal it against the head as well?

If the circumference is too small. Try using some copper wire (from cable) and join two hole, near the middle lip, with a twist in the middle (figure 8) that will make a gap across the centre and increase the circumference.
