New member check-in

Hello from Boston, Mass - USA and thanks for having me.

I literally just learned of this site yesterday on a search for another [now defunct] site I used to follow many years ago. I recognize a few members from other forums. Liking the vibe so far.
Started with meads, ciders and fruit wines. I've been stilling for about 8 years now but slowed down last few years as I started more serious winemaking 4 years ago and beer last year. Mostly rum, vodka, occasional whiskeys but looking to start more serious brandies soon. Own a 5gal stovetop, 8gal & 13gal electric boilers with 2" & 3" pot, column, plate setups.
Had a 15yr career in IT overlapped by about 6 years with a currently 15yr career in restaurants. The burnout is real :lol:
Looking forward to learning & listening to new ideas & methods and hopefully contribute from my own experience & research I've picked up along the way.

I have seen your handle around Pete on other forums, you should post up some pics of your stills if you get a chance.
Are you doing all grain mashing?

Yes when doing whiskeys [and beer] & sometimes vodka. Often my vodkas are just feints runs for neutral but sometimes I specifically go for the grainy vodka character & mouthfeel.

Next runs i will take some pics of my setup. In my newest apartment I have been using an air-cooled PC setup for my small-batch 5Gal pot.

I'm in the middle of a panela rum project rn trying to fill a 5G barrel. Got 3g so far as 2x distilled but I think I kept a bit too much into the higher tails[55-60%] so I may throw it back in to run again. Waiting a few weeks to see how it plays out before barreling. Got 8gal low wines in the wait. Figuring I can top off as I draw from the barrel over the next few years...
