Hot smoking

I couldn't leave this alone, having started a Cold smoking thread.
For me it is dead simple.
Defunct/expired pressure cooker.
Take away the 'weights' and gizzmo's from the lid.
A generous piece of foil with woodchips on in the base.
Another piece of foil above and yer meat.
Set it on yer stove and open the windows!
You will make smelly smoke.
Whole chicken,Duck and various fish, so far.
Redneck but lovin' it. :D

Smoked a whole Turkey last Xmas, ate it cold and it was
delicious. Used Olive wood and it took just over 8hrs, almost
1lb per hour, Turkey was 7.5lb.

Cause I have only just read it :lol:
Turnkey was prepped by the Boss I think she pushed butter inbetween
skin and flesh and herbs etc up the caverty ( here we go).
The Turkey doesn't dry out because of low temp cooking and the water
bath keeps it steady cooking at 100c -110c.

Been reading quite a lot about smoking recently. I've been wondering if this would be a good present for my notoriously difficult to buy for dad?!

A couple of questions for those who already use smokers if you don't mind...

Is it reasonably straight forward to get into? Is it a case of once you've got it going you can't really go wrong?

Would hot or cold smoking be a better first step?

Are there any recommended commercially made units? If I were to get him one that needs properly built up it probably wouldn't happen! :lol:

It depends how much you want to spend.
Some here rave about the Bradley smoker, but it ain't cheap.
This is a good price, and does both hot and cold cmoking;
