He barbys and occasionally outdoor pizzas too. He also gets sent out with the fryer when he makes pakora as he tends to stink out the house when he makes them!
So probably outdoor but he has power in his Barby area.
You're right about less use in the winter though.

Can you pretty much leave them to their own devices once they're going? (With occasional checks of course)

I am not convinced about INDOOR smoking. How do you not end up with a smelly house?

Close the door from the kitchen and open a window?
That is how I hot smoke, which I admit is usually shorter duration than cold smoking.
A garage sounds good though.
