Elderflower Gin Recipe

Post by StillBrewing »

Just popped into the local HBS for a few bits and also picked up some dried elderflowers.

Has anybody got a recipe using the Airstill please.

Cheers

Made some elderflower wine a few years ago (I normally use the elderberries instead).
I ended up with a really perfumed white wine. A bit too much for my taste, but it turned out to be good for blending into other wines in small amounts.

I suspect a pure elderflower gin might be a really useful component to have for blending. Bombay Saphire makes up single flavour gins, and then blends them to get a final product.

Elderflower has always sunk my boat.
In any form,- I hate the smell.
Had a chat with with fellow sausage wranglers, ( you have to read this board widely to understand this post!), tonight that claimed Corriander is a similar thing.
Genetically liked by some, and loathed by others, such as I.

Ground Corriander I like.
Leaf Corriander, to me, is like Rocket -
Lettuce that the cat pissed on.
I also don't like Rocket.
As you may have figured.

Thanks for the comments and recipes, much appreciated. Will try a small batch in the Airstill and see how I get on with it.

Robert - I'm not the biggest fan of Rocket either. Far to overpowering for my liking. Corriander leaf I do like, has a slight carrot taste to me. Maybe that's why it goes so well with Carrot soup.

But Nasturtiums are one I could eat pounds in weight of. Remember vividly walking home from school on many occasions with a friend picking them from some poor old ladies front garden. After a few weeks the patch was nearly stripped bare.

That was about 37 years ago but remember it like it was yesterday.

Nasturtiums, both flowers and leaves, yum. :) :)
It just makes me feel that I am part of some super computer.
And that I am a rat, running the wrong way through the maze. :)

Yes indeed. Use the above. Fermented dry. Then bottle with 1.5 tsp in fizz bottles with crown caps.

Hope the sausage day went OK. Been meaning to find ivans white pepper sausage recipe for you.
Corriander "sunk my boat " nice phrase. Have to agree. But have recently discovered that a small amount COOKED* can be surprisingly nice.

14g Juniper
7g Coriander seeds
2 cardamon pods
large pinch of Angelica
pinch of Orris
15 hands of elderflower. Not sure how much weight that is, but guessing it's somewhere in the 40g region. It's a big old pile.
1.5 litres neutral
1 litre water
Collect down to 45

It's a delicious gin, made some today.

While taste is obviously a "matter of taste", elderflower flavour can vary massively depending on when it is harvested. Too early in the day, or when it's an overcast/damp day you often get the cat piss smell/taste. Same at the end of the day. You need decent sun/heat on them for the proper elderflower flavour to shine.

I'm a big fan, cordial, champagne, wine, fritters, delight the list goes on. We even made elderflower champagne for our wedding champagne

A quick question, when you used the elderflower did you separate the white flowers from the green stems, or just throw the lot in?

Just the white flowers and little stems.

I pull the heads through an afro comb.

Ps. A comb attached to a gallon jerry can (or a square bowl) makes a brilliant elderberry harvester.
