Scotch White Dog, who would have thought..

So, my first whisky run in a while.
At my scale of operation converting 25Kg of grain to the good stuff involves:
4 mashes
8 Strip runs
3 spirit runs, with saved feints.

I have just completed the third spirit run
It is looking like 16+ litres at around 64% cask strength.
Plus 5 litres of 40% feints saved for the next one.

It is good that this all happens indoors close to a TV or Music source.
And does not seem like work.

With minimum alcohol pricing in effect in Scotland, the produce of this one sack, plus a few kg's of sugar has a value of around £512.
Take off the electrickery and my time, it is still worth it.
It is mine, and I know it from grain to spirit.

Anyway, to the White Dog.
I generally test my distillate, as it happens, for QC,
But usually just a tea-spoon.
For two nights I have been glugging this, and before oaking and aging, it is pretty smooth and flavoursome.

With some Oak and some time, it could be really good.

Nice, it always surprises me how a even a well practised hand, can have a special one.

With bread and beer I get a "vintage" every so often and scratch my head to try and workout why so that I can repeat it.

So what was the secret? 😁

I am wondering if it was just the 18 month lay-off, and it seeming new?
But maybe this is a "good 'un"!

I can be pedantic with words/terms, but I don't have an exhaustive vocabulary for regional terms.

Hence, I'm presuming from Roberts post, "Scotch White Dog" alludes to freshly distilled, unaged scotch whisky type product....

Or perhaps I've missed something?
