TPW

Post by DorsetScott »

I feel this may be a silly question, but I'll ask it anyway.

I want to try different washes as I've only been doing kale so far, and TPW looks to be highly rated.

From a UK point of view, is tomato paste what we call puree, or something else?

The only silly questions are the ones that you don't ask!

Tomato paste is tomato puree.

Passata is a diluted/not concentated version.

Thanks all. It's what I bought, but then started doubting myself.

Reminded me of the time very early on in my brewing career when I unthinkingly bought tartare sauce rather than cream or tartar. That was not a good brew :D :D :D

All that said. I do think the difference id only water content - so some tomatoes (canned or fresh) or some passata should work too

Not quite.
It can be bought in tins.
Very small ones or catering size.

The little tins in Tesco were cheaper than the squeezy tubes.

Many forget just to compare the price to weight numbers. Cos it doesn't matter if the tins are smaller than the tubes it's they £'s per gr/kg price that's important (and that keeps Mash's "inner Yorkshireman" happy 😆😆😆😈😆😆😁👍).....

Also tins are smaller, if you open a tube you need to use it.

Got to admit I've never read that, never refrigerated after opening, and never had a problem using one which has been open months.

Use by dates are mandatory on "food" products - not sure of status of food safety advice/instructions.

We keep ours in the fridge once opened but it can be more than 3 weeks before it's used up.

I suppose that keeping it at fridge temps just slows any degradation enough and that whether it's cooked in a recipe or fermented, must be good enough - not cause me/us any issue by the sound of it........

Not sure if that was a deliberate diffusing post.
But I would miss gaza should he decide to take up residence on one of the other boards available.
Back in the real world, I am unsure how a bacteria tainted foodstuff may affect an active yeast ferment.
For sure, I have witnessed bacteria take over finished Yeast ferments, and spoil them.
Oh, and because I can, I keep opened Tom. paste in the fridge, it's never there long anyways.

You answered your own question there. The yeast will clean them away.. But only when active.

Once the alcohol is made, its Acetobacter that wants to make a start.

Back on Tom paste, my tube is left on the shelf. But probably not more that 3 - 4 weeks. It is a store cupboard favourite. Never gets chucked away "off"
