weird wine

Been trying to use up everything in the cupboard during lockdown, this includes all the dried powders I was given for wine making. Started with apple, combo powder, concentrate and juice, this worked really well Then thought would do same with mango, so mango powder, mango juice, couldn't get concentrate so used mango pulp 30l - sg 1.07 fermented out fine, fg 1.00, knew there would be ton of sludge cos of the pulp etc, so let it settle, syphoned the clear into dj's, and left with about 8ltr of sludge This sludge appears to be fermenting, not sure what's going on, i can see the bubbles breaking on the surface, any ideas? Should I just ditch it, or thinking add loads of 'something' (not sure what yet) to see if it starts up again, never had anything like this happen before - cheers - jack

I have had ferment sludges that did not wish to quit.
I have always thrown them out.
But now await the next, 'cos I intend to give it something!, apples. plums, potatoes, something!
little to lose. maybe something to gain?

I also do kraut, kimchi and other non-yeast ferments.

Perhaps the ingress or air has allowed something in that's doing something similar - not to say that it'd be consumable, but fermentation is controlled spoilage to achieve a specific result after all.

For some really strange sounding wines, some of the FB pages emanating from the colonial cousins on the western side of the pond, need to be read to be believed 😁👍

Add a bag of sugar dissolved in 5l water to it and see what happens?

Top suggestion. At worst, if it fermented again, it could still be run for neutral etc (which is why i don't worry if one of my other brews comes out crap - I can always recover the neutral and I've yet to have any crap wines, meads, etc that taste bad as neutral at molecular level).........

Hiya mash,

I added kilo of sugar in 5ltr of water and it's gently bubbling away, looks like fermenting henna, gonna hit aldi later for fruit/juices 'something; to add to bulk it out, also have distilled some of the mango wine so think i might use the 'backset' from that just for shuts and guggles, will keep you posted, am making frankenwine :evil: :D - jack

Hi peeps, I have just added a load of orange coloured juices and syrups, all sorts of flavours, given it a good stir figuring that if it tastes as revolting as it looks I can just strip it right back when it's done. But fingers x'd frankie will be really tasty.
