By weight there is only 4% of sugar, the main component is oil. Great for making cheese or roasting, but little else except eating raw.
Always give the hardest job to the laziest person because they will always find the easiest way to do it.

Amareto springs to mind, don't know how it's made though, maybe it's macerated with almonds or something similar.

I read that almonds are fermented to make almond milk so i was hoping someone had done almonds for spirit. Amaretto is made with almonds through maceration not distilled.

Roast them and coat in hard toffee, similar to a sugared almond or make them into an Almond brittle slab.
That's what we do with them in Spain, if we don't make them into cheese.

I did a little research on Amaretto and it appears it's not made with almonds, it's brandy macerated with apricots according to wiki
I did find a recipe for mixing up a good Amaretto clone using sugar, syrup, almond and vanilla essence if anyone fancy's a go

50lbs of almonds might get me thinking these days.
This has happened to me in the past,and I just munched them.
I think to shell the whole sack for a brew might seem daunting,as compared to cracking a few for nibbles on a daily basis.

Ok ok i get it. It was just a thought. And amaretto is made from brandy, apricot nuts, and dried cherries, and whole almonds, and dried apricots. Brown sugar and vanilla added after the month long maceration. I think i am going to make a 30 litre sugar wash and add 5 pounds of crushed almonds for flavor and see what happens. I will keep you posted.
