The Best Yeast
Hi All,
ive recently had a pop fractional freezing with a sugar wash and was getting about 25% from a couple of freezer runs. It was ok, but not an air still. Ive tried an alcotec turbo yeast but the final taste was full of off flavours probably due to the 48 hr turnaround on the wash.
Can anyone suggest a yeast that has a high finishing strength with little flavour.
i havent purchased my airstill yet but wanted to get a fermentation going in prep for its iminent arrival.
can anyone let me know what kind of input/output strenghts can be achieved with just general purp bakers yeast, a winemaking "super yeast" and a high strength turbo type.

the cleanest turbo yeast iv used is vodkastar it ferments to about 14%, bakers yeast will go to about 12%, alcotek 48 turbo goes to around 17-18% even with 8kg sugar i have never had one yet that's reached 20% ,the down side with turbo is that all the nutrient gives you the off flavours that's why they tell you to filter through carbon.

ive just taken the plunge and bought the still. Im from a winemaking background so have some tronozymol. I got a free pack of yeast/carbon etc in the deal.
Any pointers for a first brew/run/filter.
