Maize meal

Well I had a 2.5 kilo bag hanging around (coarse ground) and thought I may as well use it for a mash and see if it works.
What a fekin gloopy mess I made in the kitchen. Boiled it all up in 3 batches in a large stock pot (I didn't want to risk burning my T500 boiler). Held it at 70plus for 30 mins. Added 2kg of dissolved sugar, Topped up to 25 litres and will pitch 50g of yeast when it cools to 30 degrees.
Not sure what going to happen but hey that's half the fun isn't it?

Would've been interesting to have tried it without tossing the sugar in, just to see if there had been any saccharification. If yeasties no likeee, in goes the sugar.

Edit...update at 10pm Furiously bubbling through the valve. Far more active than a kale or birdwatcher, will be interesting to see how long it goes on like that

Hmm. I didn't know maize, but I do think 70+ is a bit high for any conversion.

Its bubbling well because it had a huge amount of nutrient and low brix (SG)

What kind of starting SG should I have? If the starch HAS been converted from the corn ? Any guesses?

I think I'm gonna write this off to experience, boiling up the maize meal until it became gloopy was no fun when you have to do it in about 5 or 6 batches for a 25 litre wash. The bubbling lasted a few hours at most, the maize meal settles out of suspension but yet still takes up half of the volume of the wash tub. I've attempted to restart the fermentation with amylase and the yeasties no likely, I've pitched some more yeast but after a few minutes of bubbles feck all.
Best advice .....if you have some maize meal chuck it in the bin ....it doesn't even make decent porridge for brekkie!

Or get yourself some chuckies, they will lay you eggs worth waiting for, and happily eat failed brew experiments.

I would love to have some chuckles but Mrs H12 is never gonna go for that. We're city folk through and through .......if I wake up in the morning and can't smell diesel from a passing bus I get scared

I just emptied the fermenter and succeeded in covering the kitchen sink in gloop. This also blocked the sink waste and involved me in some severe criticism from the other half. I'm never messing with this shite again

You might reconsider and go about it a little differently. Corn does make a fine whiskey, shine, white dog or whatever you want to call it. Fermenting on grain and using a malted corn might go a long way to easing your woes.
