Specialist yeasts that can be £2 / 5g it's just too easy to not consider it.

I asked about the yeast they use....it's not top secret...but it's stored at another location..
they use the on-going batch for a number of brews then bring a fresh starter in.

Is it true that they still hold yeast from when the brewery had first started. Seem to remember them saying that or something similar when I visited many years ago.

Have been right out of stock of any spirit for ages, so ran a wash today through the reflux column and got 1.7 litres of 93% ABV hearts
, will keep me going while I ferment/strip a few washes and do a spirit run .

They never said that.....but it makes you think, what they don't tell you..

Today I racked a couple of neutral washes,and was going to start a couple more,and then the weather lady on TV said it will rain again tomorrow,so I decided to save something pleasant for the morrow.

I happen to be in the States at the moment. Head home Wednesday. But have been asked to knock out some Apple Pie before I go. So today I hit the kitchen. Chinese style Apple Pie with and American ingredients.

I did a strip run on a sugar wash today at last....it's been sat in the bucket for a few weeks. I thought I may have lost it but it smelled great so I set too...it started off well as I collected direct into a DJ.
It ran a steady stream, all was well..I checked the proof, looked ok..and it keep running, & running & running..I checked it regular, proof was falling very slow.
I finished up with a full DJ and a half a 750ml bottle...

The hydro was still showing 30% at the point where I turned the power off.

I've never taken this amount off a 23 liter wash....but I'm chuffed

I average 15 Litres from stripping a 50 Litre sugar wash but I collect down to 20% ABV

As I now stop collecting on sugar spirit runs at 30%,if not before,then I see little point in taking a strip run below a similar point.
Why carry the lower alcohols through from strip runs only to lose them later?
Unless of course you are chasing a flavoured spirit.
Just my current regime.
Next month I may be collecting to 5%,adding a pickled onion and a smoked fish and running it!

Aged stock dwindling as due to 8 month drought no distilling done for at least that amount of time. Yesterday, went out and bought brown sugar at a little under US$1.00 per kilo. Time to knock out 200 L.
