My neck of the woods has plenty of apples available, so I've decided to specialise on making batches of cider to "run".
At the moment, it's mostly cheap kit cider that I modify so they'll end up stronger, but still resemble the basics of a cider apple i.e. sugary, yet astringent and acidic!
I aim at between 10 and 15 %ABV - and while I prefer to use a pot type still (like a smart still), I also have a reflux one.
It's results are probably close to Eau de Vie. Though that does tend to have quite a "hot" taste to it (between 70 and 85 %ABV, it's not too surprising).
I also make straight "turbo/sugar" wash, if I want to try one of the various essences/flavourings available (I'll be sending the info about the ones I try, to Jimmy, "as and when"!

I still haven't managed to drop onto one of those cider kits, but as soon as I do I will be having a go with your method!

Wilko's is where I found them cheap i.e. normally about £10 to £11 a go, but I got 3 for £6 each.
