You are spot on - you need to be a year in hand.
I do the same with wine... the ingredients include sprinkling a little 'time' :D :D

Pretty tempted by all the rose hips, they are plentyful too.

I made Rose Hip Syrup one year, then never did anything with it.
It didn't contain alcohol.
Wait, I see my error...... :D

What gin recipe do you guys use for your sloes? I was thinking just juniper, coriander and cardamon plus the fixers.

Start with Gin, any Gin, sugar and Sloes.
Even commercial Gin works. :)

What he said :D

A good basic gin. The sloe flavour is strong and sweet so it masks some of the more delicate flavours.

I find i get a better taste by not adding sugar until the very end

Yeah. You can taste a glass, work out where you want it and then scale it up for the entire batch.

I use a Plymouth Gin as my base.
As you say sugar at the end, was told the Sloes
give more flavour if you sugar late.
Rather have a full bottle in front of me

Today I picked the Sloes from the only fruiting bush on our land, planted a couple of years ago, 70g!
Thankfully other bushes have bulked it up to around 4kg.

But the Damson tree is promising around 7-8 Kg of fruit, so that will be a goer this year.

Well lets see how they compare..

1.5l Sloe gin on.
5l Sloe brandy on.

If it goes well this could be a nice extra Xmas gissit.
