Re: Rum
Alan, I know your reusing the yeast from a previous wash, but if you're pitching with fresh yeast in the future, I wouldn't waste money on expensive turbos. Any yeast I've chucked at molasses has taken off fantastically well, and dry in a few days.
Once you run it, use the hot slops to melt the sugar\molasses for the next lot - about a 1/4 to a 1/3 of your total volume is a good place to start - top up with water, and pitch when in the right temp range - leave out the citric acid as it'll be plenty acidic - you can get away without the DAP too on the second gen.
by the time your on your 3rd generation reusing slops it's got a fantastic flavour. The 3rd gen will need some nutes though - boiled bakers yeast, some b vit tablets, Epsom salts and some fertiliser is what I use, or a little DAP since you have it.

Re: Rum
1.01 must mean you have a really light molasses, when I use treacle and molasses sugar, mine finishes around 1.10. It is completely dry at that with no sweetness - with 1/3 dunder\slops (what ever you call it) the next generation finishes around 1.20 - but again this is dry - its just all the suspended solids throwing the reading off.
degas - leave 2-3 days and run.
I strip my rum wash first - then run 3x strips with 20% of the boiler volumne with either dunder or wash for the extra flavour on the spirit run- I have also started adding a tin of treacle too - adds a slight sweetness to the flavour.
I aged on medium toasted oak @ 70ABV, but have also tried adding raisins, vanilla pods, pineapple, a table spoon of sherry or Bourbon, black pepper corns & caramel to the jar. All have worked out well, but need several months before it tastes like a single entity.

Re: Rum
Are you running it through an air still or a bigger pot still? I believe most folks just rack it straight into the pot after a few days to settle and run it.
You wont be able to see any clearing to speak of in my experience.
Different yeast are supposed to produce a slightly different flavour - this topic on HD goes into some detail on it

I have had good results from bakers, lager, champagne and ale yeasts. everything seems to do well on the molasses.
Oh - BTW what you shooting for ABV wise - I go to 9-10, some go higher but not much.
