I all not posted for a while, I was reading the home distillers website and found this recipe for odins easy gin,
12 g juniper berries.
3 g coriander seeds
skin one tangerine.
1 L 43% neutral
lightly crush the seeds, Macerate the seeds and tangerine peel in the neutral for about two weeks, then pot still discarding the first 10 mil collect the next 400 mil and dilutes to 45%, store in a Demi John for five weeks, then drink

Just finished racking off a sweet feed wash, all being well, I should be able to do a strip run on Thursday, then I can use one gallon of back set to melt my sugar and molasses and restart this mash again.

Made the cachaca this weekend well did the spriit run, now to do the cuts, which is tricky for me
I don't want the "burn" form the heads so I will have to do a lot of tasting

... a slight deviation; my 2yo g/son is allergic to milk and so I'm learning how to make dairy-free ice creams - very tasty they look, too! Who'da thunk I'd go vegan? (temporarily!)

It must be thirty years ago that I tried Vegan,for idealistic reasons,6 months later I finally figured that the world would continue to feed beans to livestock,as well as me,and that livestock have a really good taste..
I went straight back to red meat,haven't looked back since.

Today I tasted Cachaca.
I was sat in a bar in the middle of a desert feeling very lonely and sorry for myself, I was the only person in there. To try an pass the time away I was trying to memorise all the bottles behind the bar. I came across something that had 51 on the lable, closer inspection I saw the name Cachaca.
Never tasted it, never seen a bottle before and never heard of it until RumJohn wrote about it.
Too good an oppurtunity to miss so I treated myself to a glass.
It was absolutly gorgeous, it is now very near the top of my list of favourite drinks and is even higher on my list of things to make,if we ever get this pipeline finished.

Brian,I can confirm that RJ's recipe for cachaca is a winner;I have a litre or so left,sitting in a demi-john,on wood- trying hard to resist,now 3 months old,it just gets better.
TBH I wouldn't mind sitting in a desert tonight,instead of a damp and dreek Scotland.
Although the midges are only just making themselves evident,so life is not yet TOO itchy and scratchy.
What are you fighting off? Cicadas,locusts,Scorpions?
