Double or Triple Distill
More questions, have just ran first load through and want to know if any has or there a difference between double distilling or doing another stripping run and doing triple distillation. Wash is just sugar and water.

Strip run then spirit run is double, redilute and do another spirit is triple.
each time you re dilute for another spirit run lightens the flavour.
This is for a pot still. Typicaly your first strip run from fermented wash will take you to about 30% - possibly a bit less.
You modify these low wines to about 27% and do a spirit run. If you wish to do a third run you take the hearts, dilute to 27% again and do another spirit run.
Do a 4th and you are probably close to pot distilled vodka.
Irish whisky is often 3x distilled, it just depends what ferment you had to start with, and what taste you like.
