Butterfly Pea flowers give a nice blue color, without adding too much to the flavor. You can get them on eBay. Add too many and you get something that looks like good old fashioned meythlated spirits.

I would wager money upon commercial gins being blue due to something artificial.

Meths. Takes me back.....Used to live in a part of the world where local corner shops kept meths in the chilled drinks cabinet....Eventually, rightfully, outlawed.

I nearly posted a cheeky answer along those lines. I bet they do.
Chamomile... No flavour I could easily detect and quite a delicate blue. I did wonder if it louches later does it go like kids room blue paint?

Have a search for natural pH indicating flowers. If yo get the right one your drink will turn pink when you add tonic.

Hydrangeas are mildly toxic, so not a good idea to put them in your gin.
Drinks colored with butterfly pea flowers will turn from blue to a pinkish color when an acid is added. I'm pretty sure there's a web page somewhere about color changing cocktails.

I can confirm form my trusty book of what not to ferment, that Hydrangea does contain cyanides. IMO then prolly not worth the risk for a pretty colour. A lot of dead friends at a party might get bothersome.

Not to mention the difficulty of disposing of the bodies. Butterfly Pea flowers are a traditional food colouring in Thailand. I brought a bag back last time to make blue gin.

I really don't like gin but now I know I can make something that changes colour I'm going to have to do it! What's that Heston? Snail porridge? Sit down son, watch this G&T turn pink! That's exactly the kind of gimmick that could make you a millionaire in this crazy world, although many of you are light years ahead of me with reliable & tasty gin recipes to add this to...plan foiled, there goes my chance of riches again! If I see any of you on Dragons Den I demand royalties haha!
On a serious note Gaza, eBay is cheaper than Amazon & there is a company called BlueChai that does them in a handy tea bag, who else has some chemistry set drinks I can rustle up?
