The water is used for cutting back your grog....tiss better than tap..

My Cachaca Rum will have been on oak for 4 weeks by Sunday, so yes it's to proof my grog.
I ran it for a few hours last night, it's pretty slow going and it doesn't taste very nice but I'm tempted to call the first run a cleaning run and start again.

I think you have to put some ethanol in with the H2O for it to actually taste good...
