I think this wash worked out really well. I've double distilled it and it's now sitting on some oak that was used for my first bourbon runs.

The tails come in really early on this so I've probably picked up more tails than I'd like but the taste was quite good up to around the 65% abv mark. Once it dropped below that the bitterness crept in so I collected separately for a feints run. I also took a wide heads cut out for a feints run.

The final product is taking colour and smell from the oak, and already it has improved dramatically in flavor. I understand fresh rum tastes pretty bad so I feel better that it's come along quite well.

I have a second ferment going now of the exact same ingredients but I'll be ageing on new toasted French oak.

Good call. Not cheap but properly toasted (not by me) pucker French oak is the best IMO

I have gallons of molasses might run one up myself. Good use for my new paddle :)
