nuked blueberry vodka

Postby alan » Thu Oct 02, 2014 3:03 pm

Hi. I had a go at nuking some blueberry vodka today turned out as good if not better than steeping the fruit for a few months.
Iv got 2 gallon that I started stepping a few days ago for Christmas I will be giving it the nuke treatment later as well :)

Hi Alan

I'm not familiar with nuking flavours into spirit, what's involved?

Is it simple as letting the fruit steep for a bit in the spirit before 5 mins in the microwave or something similar?

Actually, giving it some more thought you could boil some water + some fruit+ sugar, stain off the solids, then use it to dilute your spirit to 40%

That could be nice and tasty :-)

I'm sure Alan will give you his method but I thought it worth mentioning that when making such delectable concoctions you will find it easier to strain/clear your product if you strain before adding sugar or sugar syrup ;)

Hi Anavrin
I put 1kg of blueberries in a half gallon jar with a cup of sugar then topped it up with 50% vodka an nuked it for 4 min till it was starting to nearly boil then screw on the top tight and left it to cool as it cools it forms a vacuum and draw the color and flavor into the spirit. when it was cold I repeated the process a second time.
Alan
if using smaller jars then only nuke for 1 min

Never tried the nuked fruit method, though iv'e done a quite a few citrus peel macerations,
with very good results. But i will admit i'm a huge fan of the nuked borboun style with J.D
chips or oak staves with a good heart cut from one of my faux whisky wash's, but i'm not a
fan of sugar wash nuetral's nuked with oak/or chips, it doesn't have that taste, it seems
to lack that something. It tastes like one of those £2.00 specials in the pub.

sidenote: and i'm sure Alan will agree, when he said 4mins nuking, do it in stages,my ancient
800w micro takes roughly 5 mins 30 secs. to bring 800ml in a kilner jar to 156%f-160%f I do two 2min cycles then take temps as i go any further. Might try a raspberry vodka nuke style just tocompare the taste aside from steeping.

cheers B_D

Have to agree Blue_Duck,nuking is not so good with sugar washes and chips or chunks.
It does have that taste.....
When I nuke, the micro-wave door is constantly being opened after the first couple of minutes, until I see it starting to boil.
It works for me.
