Summer Ferments
Hallelujah! Some Summer weather at last
Time for free standing ferments. The air temp is stable enough so I'm starting ferments in anything that will hold liquid and an airlock
I've got to build up some stock but all my ferments are taking 2 weeks to finish no matter what I do but at least they are finishing
Got to work on my patience

Did that pH buffer work at all for you? I had some very slow ferments lately and traced it back to a batch of weak yeast.

Yes, the buffer works for me and the pH holds constant through the ferment now.
I always make a yeast starter so I can see if the yeast is vigorous or not before pitching

The starters that I made did not seem that unusual, but fermentation died off after about half a day. It was very odd. I pitched some fresh yeast from a different source about a week later and it just took off!
