Summer Ferments

Hallelujah! Some Summer weather at last ;D

Time for free standing ferments. The air temp is stable enough so I'm starting ferments in anything that will hold liquid and an airlock :D :D

I've got to build up some stock but all my ferments are taking 2 weeks to finish no matter what I do but at least they are finishing ::)

Got to work on my patience ::)

Did that pH buffer work at all for you? I had some very slow ferments lately and traced it back to a batch of weak yeast.

Yes, the buffer works for me and the pH holds constant through the ferment now.

I always make a yeast starter so I can see if the yeast is vigorous or not before pitching ;D

The starters that I made did not seem that unusual, but fermentation died off after about half a day. It was very odd. I pitched some fresh yeast from a different source about a week later and it just took off!
