Just GS/kale/dried yeast....nothing else.
Can't say it went faster or cleaner..in fact it was a little "cloudy" when it went in the boiler..
It took 7/10 days to finish, before I stripped it.

It's the taste..the GS comes through...speed doesn't bother me...it's not the cheapest compared to sugar, but for me it comes back to taste...remember crap in..crap out.

Got it. So a good drink in its own right but perhaps not the best base for a gin?

Myself I can't stand the smell of gin....don't know why.
I don't think it would be a good base for gin as the GS does shine through...but having said that...what's to stop you trying a small batch, the sweetness of the GS may add something to the drink??? just a thought.

I'm on my 2nd GS/Kale wash....this time I put the kale in a small amount of water brought it to a simmer and hit it with a stick blender.
I only use about 6kg of GS this time as 7.5kg was too much last time. That way I have an extra wash every 6 bottles..poured all the kale into the bucket, added the yeast and away it went.
It's now in the ferm fridge at 26c..this is the highest I've ever set a wash...looking forward to running it.
The SG is 1.074..that'll do for me.

I think they are going so fast @ kale/100g/28c there is not time for Ph issues. Done is a week. 4.5l yield @ 40%

Every time I drop Bicarb into a neutral these days the old Star treck line of "Scotty, warp factor 6", and "It's the engines Captain, they cannae take it!" come to mind..
