Re: How to mash Knibbled Maze/Corn
Update
I filled my boiler tonight with 23lt from the corn mash I did in my Grainfather and about 3lt i got from my first attempt at mashing corn that I did in my AirStill, I'll strip it tomorrow and maybe so a couple of spirit runs in the airstill with it being a small batch.
I wash quite plesently supprised when I was washing out my 23lt carboy, the yeast sediment I was washing out had a bourbon'ish smell to it

Re: How to mash Knibbled Maze/Corn
I've just stripped this tonight, quite disappointed with only half a demijon of strip from 26 litres of wash, it started at only 60% and I collected down to 20%
I think my mash efficiency wash pretty shit on this one, next time I'm going to use less corn and add a couple of KG's of sugar to each wash, it also smells quite burnt
It also seriously foamed in the boiler, I've got a video of it surging and foaming, I'll post it shortly, 26lt in a 50lt keg and you can see it foaming up through a 4" column!

Great vid there A...love muttley at the end..
That "burnt" problem...I was reading only yesterday about this guy with this prob..he puts it down to the sugar left in the wash that burns on the element.
What he does now he starts the boiler of slow at (I think) 700 w...then up to 12oo w...then up to a working temp...he says that has stopped this problem.

Are you doing the acid rest on the corn prior to cooking? You have to look for it but it is mentioned in Pintoshine's thread over on AD.

"And yes I do get 1.060 from that ratio. The acid steep is commonly used in the wet milled cornstarch extraction industry. It increases starch yield by 35% because the zein protein(not water soluble) and the starch it holds together are aided in separation by the weak acid. The other binding protein glutelin is converted using lye. Since there isn't too much of that and is mostly in the germ, the weak acid treatment is sufficient."
I am intending to use the acid steep and the pre malt process when I start doing this.
