Crystal Whiskey
I have run this a couple of times and I am surprised by the difference the base makes. Kale is smooth like an Irish whiskey, WWW wheat makes for a more 'Scotch' finish.
Two completely independent testers have finished a bottle since New Year. So I think that means it's safe to post the recipe.
5 LITRE
5L 50% Wheat Wash spirit
80 g American White oak dominoes
60 g French oak domino's
1 teaspoon of honey
1 fresh vanilla pod (sliced & scraped)
50g crystal malt
10 peppercorns (consider crushing)
Method
Add everything to a jar with a tap at the bottom. Kilner 5l is ideal.
Leave the lid open - and by that I mean on the catch but not nipped up.
After 2 weeks. Raise the jar, so that a demijohn can be under the tap.
Use the bottom tap to gently trickle the spirit through a paper filter.
After you have gently filtered as much as you can, tip the remaining contents into a seive and recover vanilla & oak.
Thoroughly rinse the vanilla and oak in tap water and then return to the clean Kilner jar along with the contents of the DJ.
After 4 weeks (ish) filter again, this time leaving it in the DJ with no oak or vanilla.
Note
THIS IS NOT redistilled. Gravity and coffee filter paper [only] clear it, so it will never be perfectly 'spirit' clear, but it shouldn't be mud either.

Sounds good Mash. I love my honey dont know if 1 tsp

The honey is enhanced by the vanilla, But feel free to add it by the bucket load and report back
I buy all my oak from a friend at a French cooperage - sorry that won't help. I think I get a special deal of one sack.... and thats £eeeek
I think the minimum order is much bigger.
The problem I found buying online was that any nerk with a chainsaw could produce oak chippings, and you were never really sure what you are getting. The dominoes are very expensive IMO , but they do help 100% provenance.

not to painful also bought myself a mini parrot.

This does indeed sound interesting, although possibly more a liquor than a whiskey with sweet stuff, peppercorns and vanilla added.
