Strawberries

Postby Easydrinker » Fri Jul 03, 2015 7:10 am

Has anyone got a good idea of how to use up these little gems?
Getting sick of eating them, have about 5Kg in the freezer, and another 2 or 3 Kg to pick today.
I would be minting it,if I lived nearer Wimbledon..

My soon to be in-laws have a fruit farm, supplying Stawberrys to a major UK supermarket, I keep meaning to go and fill a fermenting bucket but haven't bothered because I can't decide what I'd do with em!

Not convinced by chills response, but it was the easy option to fill a few jars with some and pour in neutral.
I may have over-berried,it currently resembles a fruit compote.
And probably not a good idea to mix with yoghurt for breakfast.

Having lost my sweet tooth years ago, making jam would be pretty pointless.

Strawberry pie sounds interesting, but I think it would require a sweetened short pastry and cream,so once again it has no real appeal.
I'm guessing that the answer to future gluts is to grow fewer plants.
But then what if there is a crop failure?

Anyway while tapping this out,an answer has occurred to me,- strawberry chutney,I love chutneys and relishes, and do not recall a strawberry one.
Online recipes all appear to be sweet dessert type ones, more like jam.
I want something with vinegar and spice, and so when physical time allows will have a go in the kitchen, and if it is good will let anyone interested know.

Strawberry chutney - my first though was yikes, but I can imagine that the it would work well with ham, chese etc.

I think a recipe is required !

I'd like to see a recipe for that!

As for the strawberries and vodka, we were sitting out in the yard drinking it last night. It has a lovely colour and taste of strawberries and is not sweet as I added no sugar. The leftover berries are pale in colour and taste but potent! They seem to have soaked up more than their fair share of the ethanol and taste like they are 60%! I may pop them in the AirStill to recover some of that.

Having filled (crammed) a jar with berries, topped with 45% neutral and left for a few weeks,it has jellified.
Alcoholic,no added sugar,no cook,Strawberry jam!
How cool is that?

That is pretty cool! I would not have predicted that result. That is the kind of thing that might make me like toast. ;D Are you able to post a picture?

I have just eaten this sample, upon suggested toast.
Very strawberry flavour, not over sweet, and worryingly unable to taste the alcohol.
I admit that it is not as jelly like as a conventional jam.
