Yes yeast cant survive in boiling water

@ Seagull: Just use a regular bread yeast. And as suggested, kill some as described for nutrition. I have in the past thrown in a few vitamin B tablets. Good luck.

My first 9 litre trial has finished fermenting from 1080 down to 990 and is intended as 2 x stripping runs and one spirit run in an air still. I'll de-gas it for sure but am unsure about the benefits of racking it?

Mine is nearly finished fermenting now too (started it late).

Will be interested to hear the answer to Curmudgeon's racking question.

Are you going to oak yours Curmudgeon?

And is there any value in using backset/dunder in the next fermentation?

@Curmudgeon. I would assume you have let the wash settle for a few days. If so, the dead yeast will have dropped to the bottom of your fermenter. By racking the beer, you avoid transferring dead yeast into your boiler.

The yeast when heated in the boiler will create off tastes you dont want. So racking should be performed.

@Seagull. Racking question answered above.

Cachaca is typically not aged, although I use a lightly toasted American white oak.

I always start with a fresh batch. No backset.

I'm intending to use my T500 with alembic dome and condenser for the strip and spirit run :)

This is awesome Rum mate, make cocktails,
drink it neat. I still have 9 ltrs on
wood since 9th May. Will be racking off
and filtering for later in December (that
banned word %$£& !!). ;D

Going to try out my oak bottle for the first time with this once it's ready. I'm interested to see how it tastes with and without oaking. As much as anything though, I like the colour that oaking gives it.

When you 1st use oak bottle, it all happens fast.
2 weeks and taste mate put mine in @ 50%.
Your not that far from me, maybe we should
meet and have a chat. Your 45mins in my new
toy( 490 B.H.P. Supercharged Jag ) if I can slow
it down ;D ;D
