Quick gin, would it work, any opinions welcome

I have the alembic post still and the T500 column..but just want to use the pot still.

I have 50 litres of bone dry fermented cider that I made last year at 7%.
Strip run through the pot still then overnight maceration with botanicals "odins recipe" then a spirit run with usual cuts. Just thinking it might have to much of an apple brandy flavor, any thoughts?

For what they are worth, my thoughts are why only overnight with Odins selection?
I would give that maceration a few days.
We all do it differently.
There are reasons for that.

I don't think you will get a huge apple flavour.

A basket is more controllable / cleaner / repeatable. Sounds like you are enjoying making gins. Might be worth building one.

Odins is calibrated to be a long cool maceration. Is this similar to what you ram last time?

You can do hot maceration, which is typically overnight soak and boil the bots, but you need a recipe to match.

If you are not sure about the apple flavour, do the spirit run first... Taste it.. Then rectify.

@Guest: You might get something perfectly palatible, but why use a pot still when you have a column. It would be like a surgeon that has a nice sharp scalpel but chooses to operate with a spoon.

Review what constitutes a gin and then decide how to go about it.

If you want to make good Gin, you really need to start with neutral
spirit. So do a Kale wash or a Vs wash, really need 2 washes. That
will give you enough to make loads of Gin. :)

I would not expect a lot of Apple flavour to get through, using the method that you describe.
I am always happy to be proved wrong, so if you do it, please report back.

Why waste good brandy on gin.
Do very hard cuts on the brandy,dil to 65% and add a few oak staves leave for at least 3 months.Dil some to 40% and try and decide whether to leave the rest to age longer or drink now.If you over oak dilute with unoaked brandy or redistill,so little "apple" flavour comes over I do,nt notice it.
Sugar is cheap and easy to use fermenting to a higher strength

Yes, Gin starts with a good neutral.
If you have a good Brandy, don't waste it.

Is that as clear as muddy water? ;D
