ALSO roast a pineapple (even though it's only a DISTANT relative to agave)
That's a good idea. It's a bit late to mess with it now but it's something i may consider for next time. I also read that Jerusalem artichokes could be a good substitute for agave, they have similar inulin levels i think ...

I've made this pickle before, it came out really well, much better than Branston. I like spicy food so i put a few fresh home grown chillies in too.
My tip would be to cube the vegetables very well, mine were a bit too big, you notice it ...
