Water Quality ?

Ok so I did a quick search but nothing popped........ Down here, water is very hard (mostly) i.e. calcium/magnesium hardness. There's much about how hard water affects the taste, especially when used in fermented booze products. I routinely use RO water for letting down high strength stuff, the basi...

Re: Garden?

When I'm doing local work, I often trundle round looking for and at "land for sale" signs. I don't want much, just and acre or so for an orchard and few other bits (that don't need much work/effort). It'd be nice for a range of apple/pear trees and maybe some quince and meddlars. Maybe some summer f...

Re: Garden?

I still think you are going to drown in veg :D Growing is fine but the prep and storage needs a thought too. {snip} which just means that the grower needs to get into learning how to preserve as well. Yes, it may also mean that the grower needs to grow varieties that will pickle/ferment/whatever we...

I agree. A very funny book indeed. Long time ago now though. Is it worth are re-read? They all (I believe there's 7 parts) are. First one I picked up was "Rommel, Gunner Who?" and the bit that sticks in my head with the poem he wrote when a dog they'd adopted at one location was killed accidentally...

This may seem a silly question but does banana wine actually taste of bananas?
Love bananas, never very fond of banana flavoured things...
I'd guess that it depends on how it's made, cos my last two batches of nana vino had a distinct and very pronounced banana flavour once back sweetened........

Bread is often overlooked. It makes so much difference to any meal if the bread is yummy enough to eat on its own. indeed, but it was much nicer buttered and filled with sliced tomato, baby spinach (vice lettuce, but that's more about me using my reading bins when getting the bag out of the fridge)...

I have no idea what happened this time. The last one had 15g of yeast in 23 litres and behaved as expected. This one just refused to kck off, despite all operational perameters being reached. I was starting to despair, what with the amount of re-starts that I tried I still have no idea what made th...

I am beginning to think sous vide is a commercial process that doesn't translate to the domestic setting. In a restaurant it allows a consistency and an hot holding precooked. I have tried it a few times now, and while I see the need for above, it does not bring anything new to the finished dish. Y...

Hp works. Tis always a toss-up.

Is Mr Phantom going to suggest mayonnaise 😜
I don't like that bottled red vomit made by Heinz et al, but chilli jam is pretty good.....

And when it comes to bacon sarnies, a BLT does indeed have mayo in it - I'm quite partial to Sriracha mayo too.......

Here we are four weeks plus later and its only down to 1014 from 1090. Hopefully will be able to run it before Xmas...

Re: Banana Wine.

That does look nice - how long has it taken? Very easy Jam Recipe. Peel bananas discard skins. Roughly chop. Weigh. Add them and 40% of their weight in sugar to a glass bowl. Microwave until jam. I normally do 20mins high power to start with. It will turn purple and be gorgeous eating. Sounds excel...

Re: Christmas goodies

Just had to look up "The King's Ginger", as I'd not heard of that one (but I love Stones, Crabbies, etc but they're liqueur strength). Not sure if pay Β£20 or so for 50cl though - guessing that could be to do with both strength (41% ABV) and it's origin (Berry Bros & Rudd). But to replicate, I'd have...

Re: Banana Wine.

Done a number of different methods for nana wine (when I used to get free nana's, often by the case). Best method I found for my taste, was just sliced up into "coins" (obviously no labels and topped and tailed), the water and a base level of sugar, leave over night then check the numbers and correc...
