A Gin School. Please advise.

My wife and I help at a charity, supporting, helping mentally needy adults. They, when they were born may have been deprived of oxygen for too long, they experience learning difficulties, they only develop to a certain age. My friend Stuart has a clinical age of may be 14/15, however he is in his mid 50's. He looks late 30's, no stress you see, neither do they experience that.
My wife is a textile crafter, every aspect of product, manufacture, teddy bears, crochet, Sewing, Quilting, embroidery, felting, machine or by hand. Today after many years of prompting she took a class. Every one paid, rebooked, wanted to come again and invited friends. My wife can earn and help for months or years to come. She really enjoyed it.
I have been hounded for months to give a talk on the history, propagation and the creation of Gin. It has been suggested I show how Gin can be made. Discussed 'crafting/making' your own Gin, developed how Gin can be mixed, enjoyed and relished with friends as a central party piece, a social lubricant.
Today I have been 'hounded' again. With the question asked, what are the lagalities of such a venture? I myself can appreciate many people may pay £50 - £80 for a 4 hour 'workshop', history, informative, discussion, creation, sampling, advice. Directions to a continuation of this interest. Perhaps, very importantly on the legality and options, if one was to consider, producing ones own.
My wife's class raised £780 in 4 hours on one afternoon. This helps the carers and management greatly.
Thoughts please? I am always mentally expansive, I can however see many 'limitations ' regarding this suggestion.
