Kings ginger just started..

Have we all started making Christmas hooch yet or is it just me?

I have so far made a spiced pear infusion and had a first stab at apple pie.

Just had to look up "The King's Ginger", as I'd not heard of that one (but I love Stones, Crabbies, etc but they're liqueur strength).

Not sure if pay £20 or so for 50cl though - guessing that could be to do with both strength (41% ABV) and it's origin (Berry Bros & Rudd).

But to replicate, I'd have to buy one for a benchmark.

Definitely thinking of steeping ginger in spirit then sweetening it. Something tasting like Stones/Crabbies etc, but 40 or so % would be good 😋

King's ginger is very nice. I only tried it at a tasting.
I used the syrup from stem ginger jar. I don't have a recipe yet, I make it to taste.

I am by special request making a hot and spicy Gin for a mate
to enjoy with his missus over Xmas. Hot 'n' spicy!!
Juniper and coriander as per usual then Cardamom, Cuberb
All Spice, Clove Cinnamon (lots) Bitter Orange, Licorice Root,
GINGER (oh yea!!)Orris Root and Angelica. My thoughts!!

Cinnamon root is better than powder imo. But don't get carried away. Tiny bit of chilli 🌶

To get the fiery notes from ginger, it needs to be very sweet.

If you tastes the difference between dry ginger ale and a normal (Jamaican?) ginger beer, that's the difference between a ginger wine that's finished dry and one that's been back sweetened.
