Empty fermenter - what next - Rum?
I have an empty fermenter, and an idea I would like to try a simple recipe for making a golden rum, maybe spice up a bottle to test. Bearing in mind my limited experience is there a simple rum recipe that doesn't involve generations of dunder or magic spells to make something drinkable?

You can also use the idea of a home made rum essence from Buccaneer Bobs Silver, Gold and Black Rum Recipe. The entire recipe is a bit complex as it uses both live dunder and molasses. However, the home made essence can be adapted to any rum recipe.
1. After your strip run, keep some dunder (what is left in the boiler) and leave it to settle out any sediment. Retain 250 ml of this dunder, and put it in a 500+ ml bottle.
2. After your spirit run, take 250 ml of the (high proof, blended, but not diluted) hearts and add it to the bottle with the dunder.
This makes an essence that you add, after diluting hearts to drinking proof. (40% to 50% ABV).
Use 30 ml essence : 1000 ml of bottle strength hearts for a gold rum
Use 60 ml essence : 1000 ml of bottle strength hearts for a dark rum
Note: I have never had any success with a bacterial infected "live" dunder. I always use my dunder fresh and hot. I keep it sterile under airlock for future use if I need some. The essence contains enough alcohol that it will keep for a long time with no problems.

I think I have a plan, thanks guys. Rum Johns Cachaca with a Myles essence. I like the idea of tweaking the bottles with the essence to see how much variation I can get.
Never tasted Cachaca so that's the first mission. Similar to Bacardi perhaps?

It may be off -beat, but it seems some here have encouraged you to try something that was flying below your own radar a few days ago?

I do like Rhum Agricole - however raw sugar cane juice is not easy to find in my current location.
