Banana peel

So after being intrigued with banana brandy for some time, I've decided to give it a go and now have 10kg of bananas.

I am aware that this will leave me with a lot of banana peel. Anyone got any ideas that I could use them for?
I'm not under the affluence of incahol, thinkle only peep I am. Its just the drunker I sit here the longer I get.

Cheers Mash, I'll check the archive and wait for Ice to pop up with banana skin ideas.

That recipe is fairly similar to the one I'm using. I will be cooking some of the bananas to enhance flavour and using invert sugar to up the OG a little. Also using rum yeast to try and enhance the flavours too.

I've left skins on before for banana wine but more brandy recipes I've seen peel than don't

I once tried to copy a banana liquer whch came from Tenerife.
Fail.
My compost worms LOVE banana skins.

Morning Scott.

Banana wine done properly is divine....Brandy is one I've not attempted so far, but it's on the "to do" list after chrimbo. There's a lot written about for & against using the peel because of the chemicals that are used during transportation.

I'm going to follow a recipe from Jessie "Still it" on youtube, you properly know of him...search for this title on his channel.."Making Tasty Distilled Alcohol From BANANAS"

You asked about using the peel thou...Goggle "Banana Peel Bacon"...I must say I won't be trying it I'll stick to the real homemade stuff.. :lol: :lol:

I love banana wine. Have 5 bottles of the stuff ready to drink from last years batch.

Not only do I know Still It, that's the recipe I'm following!
I'm just waiting for my Rum Yeast which should be turning up today, baked 4kg bananas yesterday so nearly ready to get the wash on.

I saw Banana Peel bacon, and a banana skin chutney when I was searching for ideas. Will give the bacon a go, but I'll reserve judgement on it for now :)

Hum? well my best attempt at banana wine/mead was just "toppin and tailing" the fruit, slicing it into "coins" ( peel and all, just remove the stickers 😆), which are then added to some water and simmered for between half and an hour.

Then it's strained to remove the debris, and the liquor made up to the target quantity and fermented - once done, it's racked and stabilised, and a further 1lb or so of peeled banana per gallon (sliced into coins as well) added and left for about a month.

No effort in clearing necessary, as it drops clear brilliantly.

I suppose I could just pot still that and then just age it on some oak for a brandy.

So pleased you mentioned cutting into coins cos that's what I originally thought, and could then find no mention of it at all.

We do it routinely with plums, rhubarb and home grown produce.
Wine, easily made.
Just WTF do they spray bananas and pineapples with, to enable them to be shipped half way around the world at such a cheap cost??
I will cheerfully eat the fruits, what ever chemicals are on the outside are so far. a minor challenge to my compost worms.
Maybe my compost worms will die, maybe they will mutate and thrive from the sprayed "outsides"?

That's my usual method for banana wine. I tell you, peeling the 3kg of bananas I had in the freezer this time was not a fun experience!

I ran out of time, currently have some skins sat in the fridge, hopefully they will keep ok
