I don’t think you need to buy an airstill. If your water distiller is like mine it is better than an airstill. Because it has a bigger heating element than an airstill it will heat up about twice as fast, which is good. But it boils too much once it is up to temperature which is why you need a power controller just to throttle it back a bit. These airstill and water distillers have two bits to them, the boiler in the bottom half and the fan cooled condenser in the top. When you plug the power controller in you only want to throttle back the heating element and not the fan in the top. So you need to plug a separate lead into the top back to the mains so it gets full power. The bottom plugs into the controller so you can adjust the heat.
The links Gaza pointed you to explain all of this and help you get a decent product from your first attempt.
It is all very easy to do, the problem is you have to learn on your own which is why you need to do a little reading. It would be a piece of cake if someone was able to show you.
Good luck with it!

I believe lots of people have used water distillers to make stills? Would it not be the same as an air still with the voltage regulator?

I always put my kale wash in the airing cupboard, it loves me for doing it too. Temp is 25 to 28c ferments dry in 10 days. I then put the fermenters somewhere cold for 3 or 4 days to clear the wash, any shite/cloudiness drops out of suspension so you get a lovely clear wash to syphon into your boiler. Good luck Marv75, soon it will all be second nature to you πŸ‘

@BuffaloBob I am chasing the elusive fermentation 'stall' that requires the addition of some bicarb?

Has this ever happened to you?

I stalled a De Tomaso Pantera in the middle of Tolworth roundabout.
That was embarrassing.

Should have bunged a bit of Bicarb. in the tank, that would have sorted you, who needs Nitro?

gaza the instructor wrote: Fri Jan 01, 2021 11:43 am Tomato Paste Wash.
25ltr recipe;-
180g red split lentils (could be green etc)
70g Tomato Paste (I use the one in the squeeze tube)
Put in a jug and pour on a litre boiling water and stir.
Dissolve 5kg Sugar in warm water in your fermenter.
Add your tom & Lentil mixture.
Stir well to get air in.
Top up to 25ltr at 30c.
Add 50g bread yeast, lid on wait for 20mins, then stir in
yeast gently.
Seal and Airlock.
A vigorous ferment will start within a day and finish in
about 2 weeks.
Test and let it clear a bit. You know the rest.
I have three finished ready to still now.
Top tip temp, temp, temp Keep at 28-30c or near if poss.
This will aid your ferment and get you there quicker.
Do the lentils add anything? I generally use a tube of puree per 25l and no lentils and works pretty well.

I guess that it is a 'if it works for you, don't F*** with it' scenario.
I use less puree and add lentils.
That works for me.
More ways than one, always.
