I have just purchased one to have a go at frozen yoghurt (will that's what I said)

Has anyone got any recipes / tips / ideas.?

Has anyone tried vodka (neutral) to make the ice cream smoother?

Our first ice cream maker was the "pop the bowl in the freezer" type, didn't get along with it at all....still knocking around somewhere in the attic.

We bought our compressor type about 6 years ago, used it only last weekend, vanilla ice cream on pear upside down cake.

I find there's more than enough recipes on the net, using alcohol in making ice cream is very iffy, you have to be careful of how much you add otherwise the stuff won't set...I tend to use essence.

The key to smooth ice cream is the faster you can freeze it the smoother it is. This is due to the ice crystals not being allowed to grow as they freeze. I saw Ice cream being made at Durham Uni when my son went to have a look in 2006 (he got a Masters in Chemistry from Durham).
They were using Birds Custard powder, Milk, double cream, and Liquid Nitrogen to freeze.
It made the smoothest Ice Cream I have ever tasted.

I have tried the method of making a Custard from Eggs, and then churning it in my Ice Cream maker, and it is good.
However, a quick method is Birds Custard powder made into a quite runny custard as per recipe, add Double cream, add flavouring as required.
Freeze my Ice cream machine Bowl overnight. It needs to be frozen as the machine does not have a freezer unit (Cheap one!)
Chill the custard / cream mix overnight, then bring it all together, whip out the frozen bowl, pour in the chilled mix and churn until its ice cream.

Getting everything as cold as possible, is the key to getting it to work properly.

Oh Clotted cream is better than double cream!!

We made ice-cream in school.

Cream, sugar and vanilla extract in a Ziploc bag.
Whole bag into another (much bigger) sealable bag with ice and lots of salt.
Make the kids shake it till it freezes! :lol:
It helped to wrap the big bag in a towel or something similar to save the hands a bit.

It does work...

I wasn't planning to make alcoholic ice cream (probably am now).
It was more adding a small ammount to keep it smoother.

Gin and tonic sorbet anyone?

Thanks chaps for the tips.
Bowl already in the freezer. Machine still in Royal mail.

Condensed milk and Greek yogurt purchased.

Custard question:
Is thinner custard better?

Thanks guys, worked a treat.

First one in the bag.
Birds, condensed milk & monin vanilla.
Yabba dabba dooo that's sweet.

Real job starts now. Frozen Raspberry yoghurt.

Then gin and tonic sorbet had just got to be tried. 😁

I'm not under the affluence of incahol, thinkle only peep I am. Its just the drunker I sit here the longer I get.

Thank you. I have modified your recipe and my cheapo machine is making real good stuff.


Pint of whole milk.
Birds Custard powder made into a quite runny custard with NO sugar.
Can of Condensed milk
8 second pour of monin vanilla syrup.

Next up.
Same recipe with stem ginger added.
